  • Preheat smoker to 250
  • Use hickory wood
  • Smoke ribs for 3 hours
  • Wrap ribs in butcher paper, with squirtable margarine
  • Smoke ribs-side up wrapped for 1 hour
  • Reduce heat to 225
  • Smoke one more hour wrapped
  • Remove from wraps
  • Brush on keto barbecue sauce
  • Smoke for one more hour
  • Slice and serve
