- Preheat smoker to 250
- Use hickory wood
- Smoke ribs for 3 hours
- Wrap ribs in butcher paper, with squirtable margarine
- Smoke ribs-side up wrapped for 1 hour
- Reduce heat to 225
- Smoke one more hour wrapped
- Remove from wraps
- Brush on keto barbecue sauce
- Smoke for one more hour
- Slice and serve
